Brandon Arriaga forged his craft in some of the most demanding kitchens like Pujol in Mexico, Kong Hans Kælder in Denmark, CHIUnE in Japan and Les Frères Ibarboure in France . It is in his approach to Japanese culture that some of the most important features of his work are shaped.
Brandon's cuisine is characterized by the constant search for what he considers high-end foods and by a sensitive handling of ingredients
throughout the production chain. This leads his work to the deepest aspects of production, which flows equally on a fishing boat as in the
frenetic trance of a restaurant kitchen.
Under the alias Nácar and based in Mexico City, Brandon Arriaga puts into practice the Mexican n’ Japanese inspired idea. He is also due to open his first venture back home in CDMX.
