Francisco Xavier Guzmán & Andrey Ivanov

One of the most antipated opening in Mexico city and perhaps the entire world in 2025 is Restaurant Luisa by Chef Francisco Xavier Guzmán and Master Sommelier Andrey Ivanov; AND They will be at Chenin in 2 weeks from March 18th onwards !

Francisco honed his craft at some of the most renowned restaurants in California, including Atelier Crenn***, Californios SF**, and The Willows Inn. These kitchens instilled in him a reverence for seasonality, a commitment to sourcing directly from farmers, and the belief that every dish tells a story.

Now based in Mexico City, Francisco is shaping a new era of contemporary Mexican cuisine. As acting Chef de Cuisine at E.M Restaurant*, he contributed majorly in earning a Michelin star for E.M, blending modern Japanese influences with Mexico’s culinary heritage. His pop-up collaborations and projects, like the forthcoming Luisa, reflect his desire to share the warmth of his personal journey, from the fields of California to the vibrant kitchens of Mexico.

Andrey Ivanov on the other side of the house, is already a household legend in the Americas. A native of the city of Yakutsk, Republic of Sakha, in northeastern Siberia, Andrey immigrated to the U.S. with his parents in 1992 and the rest is history. Andrey was awared the Best Young Sommelier USA 2015 by the Chaîne des Rotisseurs Jeunes Sommeliers competition, followed by Food & Wine Somm of the year in 2016 and then the cherry on top was completing the Court of Master Sommeliers’ Master Sommelier Diploma in December 2018 becoming one of 273 persons worldwide to have done so.

Through global pop-ups, Francisco aims to share the warmth of his childhood dinner table and his passion for Mexican flavors before establishing Luisa in a permanent home in Mexico City alongside Andrey Ivanov who will be providing the firepower in the FOH.
