After our hibernation in April, we are ready to announce the next chef in residence at Chenin will be Mirali Dilbazi from Ukraine.
Born in Azerbaijan but raised in Ukraine, his culinary brilliance shines brightly. His talents were acknowledged by the prestigious “50Best Discovery,” earning him recognition as one of Ukraine’s brightest culinary stars and a pioneer of the new Ukrainian cuisine.
In 2019, Mirali embarked on a transformative culinary adventure, interning at Copenhagen’s renowned Amass. After a two year delay due to Covid, the 28-year-old chef fulfilled his dream by opening the “Mirali” fine dining restaurant in Kyiv in 2021. Here, he unveiled a groundbreaking Ukrainian cuisine, rooted in local, seasonal, and fermentation-focused ingredients. He blended cutting-edge global techniques with premium farm-sourced components, crafting a culinary masterpiece.
But the journey took an unexpected turn. After just four months, on that fateful 24th of February, Mirali’s restaurant was forced to close its doors, torn apart by the invasion of Russia into Ukraine. Yet, Mirali’s indomitable spirit prevailed. In 2023, he and his talented team are back in full swing in Kyiv.
