Nicole Philipson

Nicole Philipson from Jatak CPH will be cooking at Chenin this July. 

Nicole is a chef with Mexican roots and has experienced living around different parts of the world. After attending culinary school she worked at several notable restaurants in New York City (EMP, Cosme, The Modern) prior to relocating to Singapore and subsequently Copenhagen where she is currently based. 
After spending a few years at Relae until it’s closure in 2020, Nicole joined the opening team at Restaurant Jatak, where she is currently sous chef, heading menu development alongside chef and owner Jonathan Tam. 
Nicole finds inspiration in her Mexican upbringing and her travels while working with seasonally available ingredients to bring a produce centric experience defined by community and hospitality.
