Last up for January is Restaurant Sower from Shiga Prefecture, a mere 70 minutes train ride from Kyoto JR if you are in Kyoto that is. SOWER is helmed by American-born Chef Coleman Griffin, who trained at The Restaurant at Meadowood(***) and Benu (***) in California before traveling to Japan in 2019. Upon arrival, a year was spent as sous chef at INUA (**), the Tokyo based affiliate of Denmark’s world renowned noma. After its permanent closure due to COVID-19, he took the position of Executive chef at SOWER in 2021. Since the restaurant is in the Northern basin of Lake Biwa, its proximity to both the ocean (the Sea of Japan) and mountain allows a wide range of ingredients to be used. Chef Griffin offers exclusive dishes highlighting products from the lake, sea, and mountains. Whilst reinterpreting the history and food culture of Kohoku and Northern Lake Biwa, dishes often take influence from Japanese, French and Nordic cuisine. He will be accompanied here in Bangkok by sommelier Kathy Jeon, who have been instrumental to Coleman’s culinary journey from the get go.
